A low-carb side that packs in all the classic flavors of a typical fried rice. Soft scrambled eggs and tender veggies in a savory soy sauce mixture.
Prep time: 8-10 min.
Thaw in refrigerator.
1.Heat a large sauté pan over med heat. Add ½ Tbsp of olive oil and liquid egg. Stir constantly until egg becomes cooked through, about 2-3 min. Remove cooked egg from pan and set aside.
2.Turn up heat to high and in the same pan, add another ½ Tbsp of olive oil. Add riced vegetable mixture to hot pan and cook stirring constantly, about 3-4 min. Then add seasoned soy sauce and stir to combine, cook for another 1-2 min.
3.Remove pan from heat and add back cooked egg. Stir to combine and serve.
