Mango Glazed Salmon with Garden Veggie Rice

Mango Glazed Salmon with Garden Veggie Rice

Salmon filets are marinated in a tangy glaze of mango chutney, orange marmalade and savory spices. Served over Garden Veggie Rice.

Medium Prep time: 25-30 min.

Medium Instructions

Thaw in refrigerator.
1.Preheat broiler to med. high heat.
2.In saucepan, add rice and 1 1/8 cups water. Bring to boil, stir once, cover, and cook on low heat for 20-25 min. Add veggie mix bag and fluff with fork.
3.Meanwhile, line baking sheet with foil and spray with nonstick cooking spray.
4.Remove salmon from glaze, place on prepared baking sheet and pour remaining glaze over salmon.
5.Broil for 5-7 min. until salmon flakes with fork (internal temp 145°F). Serve with Garden Veggie Rice.
