Your next go-to fresh salad has arrived! Try our brown rice quinoa, chickpea, and green bean salad tossed in a light Mediterranean vinaigrette and topped with toasted almonds. This salad will transport you to the islands of the Mediterranean.
Prep time: 15-20 min.
Thaw in refrigerator.
1.On stovetop spray small saucepan with non stick cooking spray. Add brown rice quinoa and 1/4 cup of water, cover with lid and cook over med. heat for 10-12 min. Stir and set aside in large bowl to cool.
2.Meanwhile, in another small saute pan over med heat, cook sliced almonds until golden, about 3-5 min. Remove from heat and set aside.
3.Toss green bean and chickpea mixture with brown rice blend and vinaigrette.
4.Place on large serving platter, top with crumbled feta and toasted sliced almonds. Serve.
