Chipotle Shrimp with Mango Salsa & Jasmine Rice

Sweet and savory chipotle shrimp served over jasmine rice and topped with mango salsa.

Medium Prep time: 30-35 min

Medium Instructions

Thaw in refrigerator. 1.Preheat grill or broiler to med. high heat. 2.Add water to bag of skewers. Soak 20 min. 3.Rice: In saucepan add rice and 1 1/8 cups water. Bring to boil, stir once, cover and cook on low heat for 20-25 min. Fluff with fork. 4.Remove shrimp from marinade and thread 3-4 per skewer. 5.Broil or grill on med-high for 3-4 min. each side, just until pink. (Overcooking shrimp will cause them to be tough and chewy.) 6.Meanwhile, place mango salsa in bowl and add desired amount of red pepper flakes. Stir to combine and break up larger pieces of mango with a fork if desired. 7.Serve with jasmine rice and mango salsa.
