Crispy Salmon Cakes with Tangy Tartar Sauce

Fast Lane Dream Dinners Classics: Tender salmon cakes filled with savory spices and vegetables. Pan-fried and paired with a tangy tartar sauce.

Medium Instructions

Thaw in refrigerator.
1.Preheat oven to 400˚F. Place salmon fillets on foil-lined baking sheet, drizzle with 1 Tbsp. olive oil and sprinkle with salt and pepper.
2.Bake salmon fillets for 12-15 min. Remove from oven and using two forks, shred salmon into flakes and set aside to cool.
3.Once salmon is cool enough to touch, add flaked salmon to a large mixing bowl and combine with wet and dry mixtures. Gently stir to combine.
4.Preheat large sauté pan to med-high heat. Add 1-2 Tbsp of olive oil to pan.
5.Form salmon cakes and press firmly together. Makes 6, 1-inch thick cakes.
6.Add cakes to heated oil and cook untouched for 3-4 min. per side, or until sides are golden brown and crispy. Allow to cool on paper towel.
7.Meanwhile, empty tangy tartar sauce into bowl and stir well to combine. Serve immediately with salmon cakes.
