Hawaiian Chicken Bowl with Pineapple and Peppers

Guest Favorite Family Approved: Tender sliced chicken sauteed with peppers, onions, and pineapple, then slathered with a Hawaiian BBQ sauce and served over rice.

Medium Instructions

Thaw in refrigerator.
Rice: In sauce pan, add rice and 1 1/8 cups water. Bring to boil, stir once, cover and cook on low heat for 20-25 min. Fluff with fork.
1.Meanwhile, heat large sauté pan over med-high heat and spray with nonstick cooking spray. Add sliced chicken and spice mix and stir fry 4-5 min. breaking apart with spatula, until cooked through (internal temp 165°F.)
2.Add vegetables and continue cooking 2-3 min.
3.Add BBQ sauce and stir to combine. Reduce heat to low and simmer 4-5 min. or until heated through.
4 To serve: Place rice into bottom of bowls and spoon hawaiian chicken and vegetables with sauce over top.
