Mini Beef Tostada Cups

New Back to School: Classic Mexican fare, with crispy flour tortillas topped with cheese, beans, spiced beef, and lime crema.

Medium Instructions

Thaw in refrigerator
1.Preheat oven to 425°F. Spray muffin tin with nonstick cooking spray.
2.Heat a large sauté pan over med.-high heat. Add ground beef to pan and break apart with spatula until beef is in bite-sized pieces.
3.Add seasoned onion mixture to beef and stir well to combine. Lower heat to med.-low and cook for 6-8 min. or until beef is fully cooked (internal temp 155°F). Drain excess juices from pan.
4.Meanwhile, stack tortillas and cut in four equal quarters. Mold tortilla quarters into each muffin well, creating a cup and spray with nonstick cooking spray. Bake for 3-4 min. *Watch carefully to avoid burning.* In the last 2 min. of cooking, sprinkle 1 Tbsp. cheese over each tortilla round and finish baking.
5.Place refried beans in a microwave-safe bowl and heat for 1 min.
6.To assemble: Evenly distribute and layer the following: heated beans, beef mixture, and finish with a dollop lime crema in each mini tostada cup.
