New School Night Dinners: Flaky puff pastry surrounds tender diced chicken with chopped broccoli in a velvety cheddar sauce.
Thaw in refrigerator.
DO NOT THAW PUFF PASTRY
1.Preheat oven to 375°F.
2.Separate frozen puff pastry squares and place on baking sheet to thaw.
3.Meanwhile, on stovetop, heat sauté pan to med-high heat. Add 1 Tbsp. of olive oil.
4.Cut broccoli florets into small pieces (smaller than bite-sized). Add chicken bag and chopped broccoli to pan and cook 3-4 min.
5.Add seasoned cheese sauce to chicken and stir to blend, turn heat to low, cover and simmer 5-8 min. until heated through.
6.Meanwhile, spray muffin pan cups with nonstick cooking spray, press 6 puff pastry squares into 6 muffin cups.
7.Evenly divide chicken and sauce into cups.
8.Pinch the 4 corners of pastry together over top of mixture, bake 20-25 min., until golden. Let rest 5 min., remove from muffin cups and serve.
