Vegetable and Chickpea Curry over Coconut Rice

New Super Foods: Mixed vegetable medley cooked with spiced chickpeas in a tomato curry sauce served over coconut rice and topped with cashews.

Large Prep time: 25-30 min.

Large Instructions

Thaw in refrigerator.
1.Coconut rice: In sauce pan, add coconut milk mixture, 2 cups of water, and rice. Bring to boil. Stir once to combine, cover and cook on low heat for 20-25 min. Remove lid and stir to blend, replace lid, remove from heat, and set aside.
2.Meanwhile, preheat a large sauté pan over med-high heat. Add 1 Tbsp. of olive oil and bag of vegetables. Cook for 2-3 min.
3.Add spiced chickpea mixture to pan and stir until combined with vegetables, cook for 3-4 min. Add coconut tomato sauce to pan and stir thoroughly to combine. Once mixture is brought to a boil, reduce heat and simmer for 6-8 min.
4.To serve: evenly distribute the coconut rice in bowls. Top with vegetable and chickpea curry and sprinkle with cashews.
