Orange Asian Chicken with Vegetable Fried Rice

Lightly breaded chicken breasts with our signature slightly sweet orange sauce served over Vegetable Fried Rice.

Medium Prep time: 30-35 min.

Medium Instructions

Thaw in refrigerator.
1.In a saucepan, add rice and 1 1/8 cups water. Bring to boil, stir once, cover and cook on low heat for 20-25 min. Fluff with fork.
2.Meanwhile, using tongs, remove chicken from marinade. Discard marinade. Cut chicken breast into bite-size pieces and place in breadcrumb bag. Seal and shake bag to evenly coat. Pour chicken and breadcrumb mixture onto a plate and press remaining breadcrumb mixture firmly into chicken.
3.Heat 1-2 Tbsp. olive oil in large sauté pan over med heat. Brown chicken 3-4 min per side.
4.Pour sauce over browned chicken, cover with lid, simmer over med-low heat for 8-10 min. (internal temp. 165°F), basting regularly to coat the chicken thoroughly.
5.While chicken cooks, preheat a large sauté pan over med-high heat and add 1 Tbsp. olive oil. Once heated place cooked rice in pan and sauté for 3-4 min., the rice will brown slightly. Immediately, add fried rice sauce with veggies to rice and stir to combine, cook for 3-4 min or until sauce is absorbed.
6.Remove chicken from pan and drizzle sauce over top. Serve with Vegetable Fried Rice.
