All-natural chicken breasts are coated in a crispy, toasted coconut crumb topping, baked until golden brown and served with sweet and sour dipping sauce.
Prep time: 25-30 min.
Thaw in refrigerator.
1.Preheat oven to 400°F.
2.In a sauce pan, add rice and 1 1/8 cups of water. Bring to boil, stir once, cover and cook on low heat for 20-25 min. Fluff with fork.
3.Meanwhile, place chicken breasts in seasoned crumb bag and coat thoroughly, pressing crumb mixture onto both sides.
4.Place chicken on heavily sprayed baking pan. Sprinkle remaining crumb mixture evenly over tops and spray heavily with nonstick cooking spray for a golden crust.
4.Bake at 400°F for 15-20 min. (Internal temp.165°F)
5.Serve with sweet and sour dipping sauce with jasmine rice.
