1.In sauce pan, add rice and 1 1/8 cups water. Bring to boil, stir once, cover and cook on low heat for 20-25 min. Fluff with fork.
2.Meanwhile, in a sauté pan, brown crispy panko topping over med. heat until golden brown, 3-4 minutes. Remove from pan and set aside.
3.In same sauté pan, heat sauce mixture and simmer until sauce is slightly reduced, about 3 minutes.
4.Add shrimp and cook until just pink, about 2-3 minutes.
5.To serve, place shrimp over rice and sprinkle with crispy panko topping.
