Creamy Thai Shrimp with Coconut Rice

Medium Instructions

Thaw in refrigerator
1.In sauce pan, add coconut milk mixture and rice. Bring to boil. Stir once, cover and cook on low heat for 20-25 min. Remove lid and stir to blend, replace lid, remove from heat, and let sit until liquid is absorbed.
2.Meanwhile, heat Thai vegetable sauce in medium saut pan over medium heat for 5-7 min until simmering.
3.Add shrimp and continue to cook for 4-5 minutes, stirring 2-3 times to cook shrimp evenly.
4.Serve over coconut rice.
