Buttery Bombay Chicken with Jasmine Rice

Guest Favorite Savory chicken breasts quickly sautéed in butter and combined with a tomato-based sauce flavored with coconut milk, onion and ginger. Plus, for those who like a little heat, spice it up with cayenne pepper, or leave it out for a milder version.

Medium Instructions

Thaw in refrigerator
1.In sauce pan, add rice and 1 1/8 cups water. Bring to boil, stir once, cover and cook on low heat for 20-25 minutes. Fluff with fork.
2.Meanwhile, place butter in large sauté pan, melt over med-high heat. Remove chicken breasts, using tongs and brown chicken 2-3 min. per side. Remove chicken from pan and keep warm.
3.Add tomato mixture to same pan, cover and cook on med-low for 20-25 min.
4.Slowly whisk in coconut milk mixture, bring to a boil stirring constantly. Return chicken to sauce, reduce heat to low and simmer 4-5 min.
5.Serve chicken and sauce over jasmine rice.
