Crispy Salsa Ranch Chicken with Mexican Street Corn

Marinated chicken breasts are oven baked with a crunchy tortilla chip topping and served with salsa and Mexican Street Corn.

Medium Prep time: 20-25 min.

Medium Instructions

Thaw in refrigerator.
*Prepare Mexican Street Corn per separate cooking instructions provided.*
1.Preheat oven to 400°F. Spray baking sheet with nonstick cooking spray.
2.Using tongs, remove chicken breasts from marinade and cut each lengthwise into three strips. Discard marinade. Without letting them touch, place individually on sprayed baking sheet.
3.Generously top each chicken breast with tortilla chip crumb mixture. Press onto chicken.
4.Bake for 15-20 min. until lightly browned and crispy (internal temp. 165°F).
5.Serve with side of salsa for dipping and Mexican Street Corn.

Medium Air Fryer Instructions

Thaw in refrigerator.
*Prepare Mexican Street Corn per separate cooking instructions provided.*
1.Preheat air fryer to 380°F. Lightly spray basket with nonstick cooking spray.
2.Using tongs, remove chicken breasts from marinade and cut each lenghwise into three strips. Discard marinade.
3.Place 3-4 strips at a time into tortilla chip crumb mixture, coating completely.
4.After air fryer is heated, place coated chicken in a single layer with about 1/2 inch of space between them. Cook in batches if necessary, so as not to overcrowd the basket.
5.Spray tops of chicken with nonstick cooking spray and air fry for 10-12 min., flipping halfway through until golden brown and crispy (internal temp. 165°F).
6.Serve with side of salsa for dipping and Mexican Street Corn.
