Sherry Cream Chicken over Rice

Sherry Cream Chicken over Rice

Chicken breasts served with a combination of sherry cooking wine, Alfredo sauce, mushrooms, and tarragon.

Medium Instructions

Thaw in refrigerator.
1.In sauce pot, add rice and 1 1/8 cups water. Bring to boil, stir once, cover and cook on low heat for 20-25 min. Fluff with fork.
2. Meanwhile, remove chicken from bag, pat dry and season with salt and pepper to taste.
3.In medium sauté pan over med-high heat, spray pan with nonstick cooking spray and brown chicken on each side 3-4 min. Remove chicken from pan and set aside.
4.Add mushroom mixture to pan and sauté 2-3 min., stirring occasionally.
5.Pour in sherry sauce (bag with thinner liquid) and bring to boil, reduce heat and simmer 3-4 min.
6.Add Alfredo/onion mixture, stir to blend. Add chicken, cover and simmer 10-12 min. (internal temp 165°F).
7.Uncover and turn off heat. Remove chicken from pan and place on serving platter.
8.Add cheese mixture to sauce. Stir until well blended and pour over chicken. Serve over rice.
