Provincial Wild Rice Salad

This hearty winter salad combines wild rice, cranberries and pecans in a lemon-infused vinaigrette. Tossed with shredded parmesan and bacon crumbles for the perfect party dish.

Prep time: 3 hours

Instructions

Thaw in refrigerator
1. In med. size pot add 4 cups water and rice. Bring to boil, cover and reduce heat to low. Cook 45 min.
2.Transfer rice to a large bowl. Chill in refrigerator 1 to 2 hours or prepare up to 1 day before.
3.Add veggies and dressing to rice bowl, toss to coat.
4.Add the dried cranberry/pecan and bacon/cheese mixtures. Toss to blend, serve.
