Layers of flavors with tomatoes, herbs, seasonings, and onions combined with chicken, sausage and orzo.
Medium Prep time: 25-30 min.
Thaw in refrigerator.
1.In large skillet over med. high heat, add 2 Tbsp. olive oil. Add chicken & sausage mixture, ½ tsp. kosher salt and cook. Stir to break apart, 5-7 min. (internal temp. 165°F).
2.Pour 1/2 cup of water into tomato mixture in bag and massage to combine. Pour seasoned tomato sauce into pan with chicken. Stir to blend.
3.Stir in orzo and bring to a boil. Reduce heat to low, cover and simmer 15-20 min. until orzo is tender. If orzo sauce evaporates add extra water (¼ - ½ cup) until desired consistency.
4.Sprinkle with cheese and serve.
Instant Pot:
Thaw in the refrigerator.
1.Set Instant Pot to SAUTE. Add 1 Tbsp of oil to the bottom of the pressure cooker.
2.Add chicken mixture, ½ tsp. kosher salt and allow to brown for about 5-6 minutes.
3.Pour 1 cup of water into tomato mixture in bag and massage to combine. Pour tomato mixture into pot with chicken and add the orzo.
4.Program to cook on HIGH for 7 minutes. Leave on natural release for 5 minutes, then quick-release any remaining pressure. Open the lid and stir.
5.Top with cheese and serve immediately.
