Chicken and Cheddar Empanadas with Key Lime Corn

Medium Instructions

REMOVE PUFF PASTRY AND KEEP FROZEN.
Thaw in refrigerator.
1.Separate individual puff pastry squares and lay out on baking sheet sprayed with nonstick cooing spray to thaw for 15-20 min.
2.Preheat oven to 400F.
3.Heat 1 Tbsp. of oil over med-high heat in nonstick saute pan.
4.Place chicken in pan, spread out evenly and allow to brown in the pan for 1 min. without stirring. Stir chicken and allow to cook through for 2-3 min.
5.In a medium mixing bowl, thoroughly combine cooked chicken and potato mixture.
6.Place about 1/4 cup chicken and potato mixture evenly amongst 6 puff pastry squares on sprayed baking sheet, keep filling in the middle of the square. Brush edges with egg wash and fold into a triangle.
7.Bake 20-25 min. until golden and puffed up. Allow to cool for 5-10 min.
8.Key Lime Corn: In a separate pan sauté seasoned corn 4-5 min. over med heat until corn is cooked through. Serve on the side with empanadas and dipping sauce.
