Chicken and Cheddar Empanadas

Medium Instructions

REMOVE PUFF PASTRY AND KEEP FROZEN.
Thaw in refrigerator.
1.Separate individual puff pastry squares and lay out on baking sheet sprayed with nonstick cooking spray to thaw for 5-10 min. 2.Preheat oven to 400°F. Heat 1 Tbsp. of oil over med-high heat in nonstick sauté pan. Place chicken in pan, spread out evenly and allow to brown in the pan for 1 min. without stirring. Stir chicken and allow to cook through for 2-3 min.
3.In a medium mixing bowl, thoroughly combine cooked chicken and potato mixture.
4.Evenly divide chicken and potato mixture into the middle of each puff pastry square on sprayed baking sheet. Brush edges with egg wash and fold into a triangle. Use a fork to seal edges and puncture holes on top of pastry. Brush tops with egg wash.
5.Bake 20-25 min. until golden and puffed up. Allow to cool for 5-10 min. and serve with salsa.
