Jalapeno Cheddar Cheesy Potatoes
These potatoes have to be one of the most versatile side dishes we offer. You can cook these in an oven or in camp and any time of the day. The jalapenos add exciting flavor.
Thaw in refrigerator.
1.Heat saute pan over med high heat.
2.Add potatoes and jalapenos to taste and fry to golden about 10-15 min.
3.Top with cheese and serve.
1.Cut 2 pieces of foil 24 inches in length. Criss-cross the foil to make an "x" and spray with nonstick cooking spray.
2.Pile seasoned potatoes in the center of the "x", add jalapenos to taste, and sprinkle with cheese and fold foil together to form a packet.
3.Heat oven to 450°F or heat grill to med-high. Place foil packet in oven or on grill, close lid.
4.Roast potatoes in oven or on grill for 30-45 min. until golden and cheese is melted.
5.For easy clean up, serve in foil!
