Classic Chicken Cacciatore

New You'll swear you're in an Italian grandma's kitchen when you serve these tender chicken breasts simmered in a tomato caper sauce with loads of peppers and onions.

Medium Instructions

Thaw in refrigerator.
1.Preheat a med. sauté pan over med-high heat. Season chicken breast to taste with salt and pepper on each side. Add 1 Tbsp. olive oil to pan and cook chicken breasts, 3-5 min per side until golden brown.
2.Remove chicken from pan and keep warm.
3.In same saute pan, add vegetable blend to pan and cook for 3-5 min., until vegetables are tender.
4.Add sauce to pan and stir to combine.
5.Add chicken back to sauce, reduce heat to med.-low, and simmer for 12-15 min uncovered to allow sauce to reduce.
6.Add half and half to mixture, stirring to combine and cook for 3 more min.
7.Remove chicken from sauce and place on plate. Spoon sauce and vegetables over chicken breasts. Serve.
