Classic Chicken Cacciatore with Linguine

Global Flavors: Tender chicken breasts simmered in a tomato caper sauce with loads of peppers and onions served over linguine.

Large Prep time: 30-35 min.

Large Instructions

Thaw in refrigerator.
1.Fill large pot 3/4 full with hot water. Add 1 tsp. salt and cover with lid. Bring to boil. Add pasta and cook 10-12 min. or until desired tenderness. Drain, return to pot, add 1 Tbsp. olive oil, toss to coat.
2.Preheat a large sauté pan over med-high heat. Season both sides of chicken breasts with salt and pepper. Add 1 Tbsp. olive oil to pan and cook chicken breasts, 3-5 min per side until golden brown. Remove chicken from pan and keep warm.
3.In same sauté pan, add vegetable blend and cook for 3-5 min., until vegetables are tender.Add sauce to pan and desired amount of red pepper flakes. Stir to combine.
4.Add chicken back to sauce, reduce heat to med-low, and simmer uncovered for 12-15 min. to allow sauce to reduce.
5.Add half & half mixture to chicken and vegetables, stirring to combine and cook for 3 more min. Serve chicken and sauce over linguine pasta.
