Hearty Braised Beef with Autumn Vegetables

Tender braised beef in gravy with roasted root vegetables and baby potatoes.

Medium Prep time: 2 1/2-3 hrs.

Medium Instructions

Thaw in refrigerator.
1.Preheat oven to 350°F. Place Dutch oven or oven-safe pot on med. high heat and add 1 Tbsp. of olive oil.
2.Remove steaks from package, pat dry, and season with salt and pepper to preference. Add to pot and sear on each side for 2 min. Let steaks brown but do not cook through. Remove and set aside.
3.Add gravy to pot with 1 cup of water. Stir to combine and bring to low boil for 1 min. Add steaks and stir to coat. Cover pot with lid or foil and bake in oven for 1 hour.
4.Add vegetables and continue to cook until meat and vegetables are fork tender (additional 1 to 1 1/2 hours).
5.Remove from oven and let rest for 5 min. Shred beef, if desired, and serve with gravy and vegetables.

2.Remove steaks from package, pat dry, and season with salt and pepper to preference. Add 1 Tbsp. of olive oil to pan and sear on each side for 2 min. Let steaks brown but do not cook through.
3.Add steaks, gravy, 1 cup of water, and vegetables to crockpot. Stir to combine.
4.Cover and cook on high setting 3-4 hrs. or low for 6-8 hrs.
5.Shred beef, if desired, and serve with gravy and vegetables.
