Tender sirloin steaks pan seared and finished with a savory red wine sauce.
Medium Prep time: 25-30 min.

1.Preheat oven to 375°F. Preheat large sauté pan or cast-iron pan over high heat. While pan is heating, season steaks with salt and pepper as desired. Add 1 Tbsp. of oil to heated pan. Sear steaks for 1-2 min per side creating a golden brown crust. 2.Place seared steaks on baking sheet and finish cooking to desired temp. in oven:
125°F for rare (about 8-10 min.)
135°F for medium rare (about 10-13 min.)
145°F for medium (about 13-15 min.)
155°F for well done (about 15-20 min.)
3.Meanwhile,.drain any remaining fat from pan and reduce heat to med-low. To pan, add onion mixture and cook for 2-3 min. 4.Add red wine sauce and 1 cup water to pan and stir well to combine until the sauce bubbles, thickens, and reduces, about 4-6 min. 5.Remove pan from heat and add finishing butter, stir until butter has completely melted. To serve: Spoon sauce over steaks.
