Deconstructed chicken egg roll with cabbage, shredded carrots, and sliced chicken breast served over rice with wonton crisps.
Medium Prep time: 25-30 min.
Thaw in refrigerator.
1.In a saucepan, add rice and 1 1/8 cups of water. Bring to boil, stir once, cover, and cook on low heat for 20-25 min. Fluff with fork.
2.Meanwhile, preheat oven to 400°F. On a foil-lined baking sheet sprayed with nonstick spray, add wonton squares. Lightly spray each wonton with nonstick spray and add a sprinkle of salt. Cook wontons for 4-5 min. or until golden brown and bubbly. Remove from oven and set aside.
3.Preheat large saute pan over med. heat with 1 Tbsp. of olive oil. Add seasoned chicken to heated pan and cook for 5-6 min., breaking apart chicken with spatula (internal temp. 165°F).
4.Add cabbage mixture to pan with chicken and stir to combine. Cook for additional 3-4 min.
5.To serve, spoon chicken egg roll mixture into bowl over rice. Top each bowl with three wonton squares, either crushed or whole.
