Healthy Family Habits: Go meatless with this vegetable-packed green chili with white beans and corn served with cheddar cornbread muffins.
Medium Prep time: 35-40 min.
Thaw in refrigerator.
1.Preheat oven to 375°F. 2.Heat soup pot over med-high heat. Add vegetable bag and 1 Tbsp. of olive oil, sauté for 3-5 min. until vegetables have softened. 3.Add white bean mix to pot with vegetables, stir to combine and cook for an additional minute.
4.Add 4 cups of water, reduce to medium heat. Allow soup to simmer for at least 20 min.
5.Meanwhile, in a mixing bowl, combine dry cornbread mix and wet cornbread mix (with egg and corn). Add 1/3 cup of half & half into cornbread batter and stir to combine. Reserve remaining half & half.
6.Spray muffin tin with non-stick spray and evenly distribute cornbread batter into 6 muffin wells. Bake for 15-20 min. Remove from oven and allow to cool for 5 min.
7.Right before serving, add remaining half & half to soup and stir. Suggested toppings: shredded cheese, sliced jalapeños, and tortilla chips.
CROCKPOT: Add vegetables, white bean mix, and 4 ½ cups water to crockpot. Cook on low for 4-6 hrs. Add half & half 10 min. before serving. Make corn muffins as directed above.
