Start your day with our hearty breakfast bacon burrito. Packed with bacon, green onions, diced potatoes, salsa, and melted cheese. Customize to your taste as you cook.
Prep time: 10-15 min.
Thaw in refrigerator.
1.In saute pan, add 1 Tbsp. olive oil on med. high heat.
2.Add potato mixture to pan and cook, stirring frequently, until browned, about 5-6 min. Add bacon and cook for an additional 3-4 min. Remove from pan and keep warm.
3.Reduce heat to med. and add butter to pan. Once butter is melted, add egg mixture and scramble until cooked through. Remove from heat and add the cheese on top to melt.
4.To assemble: warm tortillas in microwave in 10 second intervals until warm. Lay tortillas on a clean flat surface. Divide the cooked eggs equally on each tortilla, followed by potato and meat mixture. If desired, add salsa to each burrito. Roll each tortilla tightly to secure filling. Serve immediately with salsa on the side or wrap each burrito in foil to travel.
