This salmon is rubbed with traditional dry Cajun spices. The blackened rub is offset by the sweetness of the colorful pineapple salsa.
Large Prep time: 10-15 min.
Thaw in refrigerator.
1.Put salsa in a serving bowl, stir well and set aside.
2.Melt butter in a microwave-safe container (not plastic bag) or on the stove.
3.Brush both sides of salmon with melted butter.
4.Sprinkle ½ tsp. Cajun seasoning on each side of fillets.
5.Spray large, heavy saute pan with nonstick cooking spray. Heat over med-high heat.
6.Cook salmon fillets 3-4 min. per side just until they flake with fork.
7.Serve with salsa on the side.
