1.Preheat oven to 350°F. Spray a foil-lined baking sheet or muffin tin (for mini meatloaves) with nonstick cooking spray.
2.Add ground beef and 1/4 tsp. kosher salt into breadcrumb bag and massage to thoroughly combine.
MEATLOAF: shape 1/2 the meat into a 4x6x2" loaf and place on baking sheet. Sprinkle gorgonzola cheese evenly over beef to within 1" of edge. Press remaining beef mixture on top. Top with marinara sauce. Bake uncovered for 45-55 min.
MINI LOAVES: roll into 6 balls and press into cups of muffin tin. Evenly distribute gorgonzola cheese into the meatloaves by pressing the middle of each ball and pinch the top together to seal. Top with marinara sauce. Bake for 25-30 min.
3.Remove meatloaf or mini loaves when brown and crisp around the edges (internal temp. 160°F).
4.Let rest 5 min. before cutting loaf into 1 1/2-inch slices or serving individual mini meatloaves with Seasoned Mashed Potatoes.
