Sweet & Sour Chicken with Jasmine Rice

Chicken breasts, water chestnuts, and baby corn simmered in our sweet and sour sauce, served over jasmine rice.

Medium Prep time: 25-30 min.

Medium Instructions

Thaw in refrigerator
1.In a saucepan, add rice and 1 1/8 cup water. Bring to boil, stir once, cover and cook on low heat for 20-25 min. Fluff with fork.
2.Meanwhile, heat med. saute pan over med. high heat and spray with nonstick cooking spray or use 1 Tbsp. olive oil. Add chicken and cook for 2-3 min. per side until lightly browned.
3.Add sauce to pan with chicken, bring to a boil, reduce heat to med. low and continue to cook for 15-20 min., stirring often (internal temp. 165°F).
4.Serve chicken and sauce over rice.
