Guest Favorite Chicken breasts marinated in a classic blend of chopped tomatoes, garlic, basil, balsamic vinegar, and olive oil, served with a side of orzo.
Medium Prep time: 20-25 min.
Thaw in refrigerator.
1.In a med. saucepan, bring 2 cups of water to a boil. Add orzo pasta and cover. Reduce heat to low and simmer 8-10 min. stirring frequently until all moisture is absorbed and orzo is tender. Remove from heat and set aside.
2.Heat broiler to high. Spray a foil-lined baking pan with nonstick cooking spray.
3.Add sauce to med. saucepan on med. high heat. Bring to boil, reduce heat and simmer 10-12 min. stirring occasionally.
4.Remove chicken from marinade and place on baking pan. Discard marinade.
5.Broil on high 4-5 min. per side (internal temp. 165°F).
6.Serve with sauce spooned over chicken and orzo.
