Chicken Mirabella with Linguine

Chicken breasts baked in a tangy, sweet sauce of dried plums, capers, and green olives served over linguine.

Medium Prep time: 25-30 min.

Medium Instructions

Thaw in refrigerator.
1.Preheat oven to 350°F. Spray 8x8 baking dish with nonstick cooking spray.
2.Place chicken in sprayed baking dish and top with sauce.
3.Bake, covered for 20-25 min. (internal temp. 165°F).
4.Meanwhile, fill large pot 3/4 full with hot water. Add a pinch of kosher salt and cover with lid. Bring to boil. Add pasta and cook 9-11 min. or until desired tenderness.
5.Remove bay leaves from Chicken Mirabella before serving over linguine. Enjoy!

Instant Pot
Thaw in the refrigerator.
1.Place chicken breasts and sauce with ½ cup water in Instant Pot. Set to HIGH pressure for 10 minutes. After 10 minutes do a quick release of the pressure (internal temp 165°F).
2.Meanwhile, fill large pot 3/4 full with hot water. Add a pinch of kosher salt and cover with lid. Bring to boil. Add pasta and cook 9-11 min. or until desired tenderness.
