Savory chicken breasts quickly sauteed in butter and combined with a tomato-based sauce flavored with coconut milk, onion and ginger and served with jasmine rice.
Medium Prep time: 25-30 min.
Thaw in refrigerator.
1.In sauce pan, add rice and 1 1/8 cups water. Bring to boil, stir once, cover and cook on low heat for 20-25 minutes. Fluff with fork.
2.Meanwhile, place butter in large saute pan, melt over med. high heat. Remove chicken from bag and brown 2-3 min. per side. Remove from pan and keep warm.
3.Add tomato mixture, 1/2 cup water, and desired amount of cayenne pepper to same pan. Cover and cook on med. low for 5 min. Add chicken back to saute pan and simmer for 10-15 min. (internal temp. 165°F).
4.Remove chicken from pan and keep warm. Slowly whisk in coconut milk mixture, bring to a boil stirring constantly. Reduce heat to low and simmer 4-5 min.
5.Serve chicken and sauce over jasmine rice.
