COCONUT MAHI MAHI WITH JASMINE RICE

Enjoy a taste of summer in mid-winter! This complete island treat takes your taste buds on a trip and adds more fish for a healthy diet! Even the kids will gobble this one up. Sweet coconut delightfully paired with our brand new Mahi Mahi filets. It’s ready in 20-25 minutes!

Medium Prep time: 20-25 min.

Medium Instructions

Thaw in refrigerator
Rice: In sauce pan, add rice and 1 1/8 cups water. Bring to boil, stir once, cover and cook on low heat for 20-25 min. Fluff with fork.
1. Warm nonstick pan over med high heat. Spray with nonstick cooking spray and sear Mahi Mahi 2-3 minutes each side. (Over cooking will cause the fish to be tough)
2. Add coconut sauce to the pan with Mahi Mahi and bring to a boil. Reduce heat to low and simmer 10-12 minutes. Remove bay leaf.
3. Serve Mahi Mahi and sauce over Jasmine rice.
