Tender pork tenderloin is glazed with a sweet Asian-style sauce made with teriyaki, sesame oil, honey and Sriracha. Served with Fried Rice.
Medium Prep time: 30-40 min.
Thaw in refrigerator.
1.Preheat oven to 425°F. Spray a foil-lined baking sheet with nonstick cooking spray.
2.Remove pork tenderloin from bag and discard marinade. Place on baking sheet.
3.Add desired amount of sriracha to bag of glaze and massage to blend, and spread half of the glaze on top of the tenderloin. Reserve the remaining half for serving. Bake for 25-30 min.
4. Meanwhile, in a saucepan, add rice and 1 1/8 cups water. Bring to boil, stir once, cover and cook on low heat for 20-25 min. Fluff with fork
5.Preheat a large sauté pan over med-high heat and add 1 Tbsp. olive oil. Once heated place cooked rice in pan and sauté for 3-4 min., the rice will brown slightly. Immediately, add fried rice sauce with veggies to rice and stir to combine, cook for 3-4 min or until sauce is absorbed.
6.Remove tenderloin from oven, let rest 5-10 min. and slice into 1/4 inch slices (internal temp. of 145°F.). Drizzle remaining glaze over sliced pork and serve with Vegetable Fried Rice.
*Tenderloin can be safely served lightly pink in the center.*
