Tender pork tenderloin topped with creamy herbed cheese, wrapped in flaky puff pastry.
Medium Prep time: 45-55 min.
Thaw in refrigerator.
DO NOT THAW PUFF PASTRY.
1.Preheat oven to 425°F.
2.Separate frozen puff pastry squares and place on baking sheet sprayed with nonstick cooking spray to soften, 10-20 min.
3.Cut tenderloin into 6 equal portions, approx. 2-inch thick.
4.Divide herb cheese into 6 equal pieces and place on the center of each puff pastry square.
5.Add 1/2 tsp. kosher salt to dry rub bag and shake bag to combine. Rub both cut sides of the pork with dry seasoning, and place one piece in the center of each puff pastry on top of the herb cheese.
6.Stretch corners of square to cover pork and pinch all seams to seal. Place seam-side down on sprayed baking sheet. Using a pastry brush, spread egg wash mixture on top of Wellington pocket.
7.Bake 25 min. (internal temp. 145°F). Remove from oven and let rest 5 min. before serving.
