Global Flavors: Pork tenderloin braised in a pineapple and pepper sauce brimming with sweet and sour flavor served over Jasmine rice.
Medium Prep time: 45-50 min.
Thaw in refrigerator.
1.Heat a large sauce pan or Dutch oven over med-high heat, add 1 Tbsp. olive oil. Remove pork tenderloin from marinade (discard marinade) and add to heated pan. Sear all sides of the tenderloin, about 2 min. per side.
2.Add pineapple/pepper blend and sweet and sour sauce to pork tenderloin, and stir to combine.
3.Turn heat to low and simmer, covered for 15 min.
4.Meanwhile, in saucepan, add rice and 1 1/8 cup water. Bring to boil, stir once, cover and cook on low heat for 20-25 min. Fluff with fork.
5.Turn tenderloin over and cover again. Continue cooking for another 15 min. (Internal temp.145°F).
6.To serve, slice pork into 1/4 inch slices, plate over rice and ladle sauce with pineapple and peppers over top.
