Roasted Sweet Potatoes and Brussels Sprouts in Warm Dressing

Roasted Brussels sprouts and sweet potatoes are beautifully balanced with a warm, tangy dressing and a hint of sweetness.

Prep time: 25-30 min.

Instructions

Thaw in refrigerator.
1.Preheat oven to 400°F. Spray a foil-lined baking sheet with nonstick cooking spray.
2.Evenly spread brussels sprouts and sweet potato mixture on baking sheet and sprinkle with 1 tsp. kosher salt. Roast for 20-25 min. or until vegetables begin to brown and crisp.
3.While vegetables are in the oven, pour the contents of the dressing portion cup into a small saucepot on med. low heat until dressing begins to simmer. Remove from heat.
4.To serve, add cooked vegetable mixture to a large mixing bowl, add warm dressing and pecans, and stir to combine.
