Tortellini and Vegetable Medley Soup

New Meatless Monday! You will be warmed from the inside out with this beautifully light yet flavorful soup. Pillows of cheese tortellini are surrounded by zucchini, carrots, peas, and spinach in a flavorful Italian broth.

Medium Instructions

Thaw in refrigerator
1. Heat medium soup pot over med-high heat. Add vegetable medley to heated pot, saute for 3-5 min to soften vegetables.
2. Add soup base to pot with vegetables, stir to combine and cook for additional minute.
3. Add 4 1/2 cups of water, over medium heat. *NOTE* For hearty soup consistency, reduce added water to 3 ½ cups. Allow soup to simmer for at least 20 min (the longer the soup simmers, the more flavorful it will become).
4. After 20 min, add tortellini and spinach. Allow tortellini to cook through for 7 min. Serve individual bowls and sprinkle desired parmesean cheese on top.
