Blackened Salmon with Pineapple Salsa

Fast Lane This salmon is rubbed with traditional dry Cajun spices. The blackened rub is offset by the sweetness of the colorful pineapple salsa.

Medium Instructions

Thaw in refrigerator.
1.Put salsa in a serving bowl, stir well and set aside.
2.Melt butter in a microwave-safe container (not plastic bag) or on the stove.
3.Brush both sides of salmon with melted butter.
4.Sprinkle ½ tsp. Cajun seasoning on each side of fillets.
5.Spray large, heavy saute pan with nonstick cooking spray. Heat over med-high heat.
6.Cook salmon fillets 3-4 min. per side just until they flake with fork.
7.Serve with salsa on the side.
