Fast Lane Dream Dinners Classic: Shrimp sautéed in a garlic herb sauce served over creamy polenta and topped with crispy breadcrumbs.
Thaw in refrigerator
1.In a large sauce pot, bring 2 1/4 cups of hot water to a boil. When water is boiling, gradually sprinkle in dry polenta mixture, stirring constantly. Lower heat to med-low, simmer and stir polenta until thickened (4-5 min.). Turn heat to low and add bag of half & half and cheese to polenta and stir until cheese is melted.
2.Meanwhile, in a sauté pan, brown crispy panko topping over med. heat until golden brown, 3-4 minutes. Remove from pan and set aside.
3.In same sauté pan, heat sauce mixture and simmer until sauce is slightly reduced, about 3 minutes.
4.Add shrimp and cook until just pink, about 2-3 minutes. Right before serving, remove polenta from heat and season with salt and pepper to taste.
5.To serve, place shrimp over polenta and sprinkle with crispy panko topping.
