Parmesan Pesto Salmon with Cheese Crisps

Fast Lane Salmon filets are marinated in a blend of seasonings, wine and lemon. They are then coated in a rich basil pesto and topped with crunchy Parmesan cheese crisps.

Medium Instructions

Thaw in refrigerator.
Parmesan Crisp:
1.Spray saute pan with nonstick cooking spray.
2.Heat pan over med-low heat, scoop 1 Tbsp. Parmesan cheese onto pan and flatten with spatula to form into circle (approx. 3 inch rounds). Repeat to make 3 crisps, reserve remaining cheese for salmon. Cook 4-5 min. until all cheese starts to bubble and turn golden. Remove from heat and allow to cool 1 min. before removing from pan.
Salmon:
1.Remove salmon from marinade. Generously coat 1 side of the salmon with remaining parmesan cheese.
2.Heat 1 Tbsp. olive oil in same pan over med-high heat. When oil is hot, carefully place salmon in pan, cheese side down. Reduce heat to med and cook 4 min.
3.Turn salmon over and coat with heaping Tbsp. of pesto sauce, cook additional 2-3 min. just until the fish flakes with fork. Serve topped with cheese crisp.
