Pre-Assembled Salmon filets are marinated in wine and lemon topped with basil pesto and parmesan cheese crisps.
Thaw in refrigerator.
Parmesan Crisp:
1.Preheat oven to 400°F.
2.On a baking sheet lined with parchment paper or foil, evenly divide Parmesan cheese into 6 mounds, gently pat down to form into approx. 3 inch circles. Reserve remaining cheese for salmon. Bake 4-5 min. until cheese starts to bubble and turn golden. Remove from heat and allow to cool.
Salmon:
1.Remove salmon from marinade. Generously coat 1 side of the salmon with remaining parmesan cheese.
2.Heat 1 Tbsp. olive oil in sauté pan over med-high heat. When oil is hot, carefully place salmon in pan, cheese side down. Reduce heat to med and cook 4 min.
3.Turn salmon over and coat with heaping Tbsp. of pesto sauce, cook additional 2-3 min. just until the fish flakes with fork. Serve topped with cheese crisp.
