Thai Peanut Chicken with Jasmine Rice

Guest Favorite Make one of your favorite Thai dishes at home! Tender chicken in a velvety peanut sauce with a touch of lime, fresh cilantro and sweet heat, all served over jasmine rice. Easy to prepare in 30 minutes or less.

Medium Instructions

Thaw in refrigerator.
1.To prepare rice: In sauce pan, add rice and 1 1/8 cups water. Bring to boil, stir once, cover and cook on low heat for 20-25 min. Fluff with fork.
2.Spray saute pan with nonstick cooking spray. Over med-high heat, add chicken and brown 3-4 min. Add portion cup of crushed peanuts, stir occasionally for 2-3 min.
3.Reduce heat to med and add Thai peanut sauce to chicken. Simmer 6-7 min., stirring often, allowing sauce to thicken. Remove from heat.
4.Serve over jasmine rice.
