Greek Chicken with Lemon Feta and Toasted Orzo

Greek Chicken with Lemon Feta and Toasted Orzo

Chicken breasts seasoned with oregano and olive oil and topped with fresh lemon slices and feta cheese. Served with Toasted Orzo.

Medium Prep time: 15-20 min.

Medium Instructions

Thaw in refrigerator.
*Prepare Toasted Orzo per separate cooking instructions provided.
1.Preheat oven to 375°F. Remove chicken from marinade and place on a baking pan sprayed with nonstick cooking spray. Discard marinade.
2.Top each piece of chicken with a slice of lemon. Drizzle remaining olive oil from lemon bag evenly over chicken and bake for 10-12 min. (internal temp. 165°F).
3.Lift lemon slice from chicken and evenly distribute feta cheese on top of chicken. Replace lemon slice on chicken and cook additional 1-2 min. to slightly melt cheese. Serve with Toasted Orzo.

2.Grill chicken 4-5 min. per side and grill lemon slices 1-2 min. per side.
3.Top chicken with feta cheese and grilled lemon slice. Allow feta to slightly melt, remove from grill (internal temp. 165°F). Serve with Toasted Orzo.
