Cuban-inspired chicken in a bright citrus sauce with a side of black beans and rice and finished with a charred orange squeeze.
Medium Prep time: 40-45 min.
Thaw in refrigerator.
1.In a sauce pot, add rice and 1 1/8 cups of water. Bring to a boil, stir once and cook covered on low for 15-20 min.
2.Pre-heat grill to med-high or broiler to high.
3.Cut orange into quarters and set aside.
4.After rice is done cooking, remove lid and add seasoned black beans and ½ tsp. of kosher salt, stir once and replace lid. Cook covered on med-low for 10 min. more.
5.Remove chicken from marinade, discard marinade. Grill or broil chicken and oranges for 4 min. per side (internal temp. 165°F). Oranges should be charred and juicy.
6.While chicken is cooking, in a small sauce pot over med-low heat, add citrus sauce and 1 tsp. of kosher salt. Bring to a low simmer about 5 min. Sauce should thicken slightly.
7.Serve grilled chicken drizzled with warmed citrus sauce alongside black beans and rice. Squeeze charred oranges over chicken for an extra burst of flavor.
