Mexican Tortilla Lasagna

Guest Favorite A delicious twist on lasagna. Tortillas layered with seasoned ground beef, black beans, peppers, onions, and cheese. All baked to a golden brown and perfect for a weeknight fiesta.

Medium Instructions

Thaw in refrigerator.
1.Preheat oven to 350°F. Spray 8 x 8 baking dish with nonstick cooking spray.
2.On stove top in med skillet over med high heat, break up and brown ground beef until no longer pink, 5-7 min. Drain excess liquid.
3.Add sauce and bean bag to beef. Bring to boil and stir to combine. Remove from heat.
4.Evenly layer in baking dish: 1 heaping cup of meat and sauce, 2 tortillas, 1/6 cup cheese.
5.Repeat 2 more layers, ending with remaining cheese.
6.Bake covered for 15 min, remove cover and bake 10 to 15 min until golden. Let rest 5 min before serving.

Prep time: 35-40 min.


Large Instructions

4.Evenly layer in baking dish: 2 heaping cups of meat and sauce, 4 tortillas, 1/3 cup cheese.
5.Repeat 2 more layers, ending with remaining cheese.
6.Bake covered for 30 min, remove cover and bake 10 to 15 min until golden. Let rest 5 min before serving.
