Pork Tenderloin with Apricot Butter and Roasted Heirloom Potatoes

Fast Lane Warm spring nights call for time around the table enjoying our delicious pork tenderloin served over roasted heirloom potatoes, all topped with an apricot compound butter.

Medium Instructions

Thaw in refrigerator
1.Preheat oven to 425°F and preheat a pan over med-high heat on stovetop with nonstick cooking spray. Prepare two foil lined baking sheets sprayed with nonstick cooking spray.
2.Remove tenderloin from bag and sear in preheated pan for 3-5 min per side. Once brown, transfer to foli lined baking sheet and place in oven.
3.Evenly spread Heirloom potatoes in a single layer on second baking sheet. Toss with 1 Tbsp of olive oil and salt and pepper to taste.
4.Bake both tenderloin and potatoes in oven for 25-30 min. Half way through, remove potaoes from oven and stir and return to oven for remaining cook time.
5.Remove tenderloin from oven (Internal temp. of 145°F) and let rest 10 min. while potatoes finish roasting. *NOTE:Tenderloins vary in size and cooking time may vary.6.Slice tenderloin into 1/4" slices, place on top of roasted potatoes. Top tenderloin with Apricot Compound Butter and serve.
