Pork Tenderloin with Apricot Butter and Roasted Heirloom Potatoes

New Warm spring nights call for time around the table enjoying our oven roasted pork tenderloin served alongside diced heirloom potatoes, all topped with a warmed apricot butter drizzle.

Medium Instructions

Thaw in refrigerator
1.Preheat oven to 425°F. Prepare two foil lined baking sheets sprayed with nonstick cooking spray.
2.Remove tenderloin from bag and place on baking sheet.
3.Evenly spread Heirloom potatoes in a single layer on second baking sheet.
4.Bake both tenderloin and potatoes in oven for 30-40 min. Half way through, remove potaoes from oven and stir. Return to oven for remaining cook time.
5.Remove tenderloin (Internal temp. of 145°F) and let rest 10 min. Continue roasting potaoes until golden brown and crispy.
6.Meanwhile, melt butter in small saucepan and keep warm.
7.Slice tenderloin into 1/4" slices, place on plate alongside potatoes.
8.Drizzle tenderloin with melted Apricot Butter and serve.
