Spiced Pork Tenderloin with Butternut Squash Hash

New Warm spices coat a juicy pork tenderloin paired perfectly with a fresh butternut squash and brown rice and quinoa hash. This dish is sure to warm you to the core.

Medium Instructions

Thaw in refrigerator
1.Preheat oven to 350°F and a medium sauté pan over med-high heat. Foil line a baking sheet and spray with nonstick cooking spray.
2.Shake seasoning bag to mix well. Remove tenderloin from packaging and liberally season with seasoning mix.
3.In pre-heated sauté pan, add 1 Tbsp. olive oil and sear tenderloin on each side for 3-4min per side or until golden brown. **Keep pan w/ seasonings for later use.**
4.Place seared tenderloin on baking sheet and bake 20-25 min (internal temp 145°F). Remove from oven to rest, cover with foil and keep warm.
5.Meanwhile, in same pan sauté butternut squash and spinach mixture for 7-9 min. Add grain mixture and toss to combine. Add 1/4 cup of water to hash mixture, stir, and cover with lid. Reduce heat to low and allow to simmer for 5 min.
6. Slice pork tenderloin into 1/4 inch slices and serve with hash.
